Domestic animal (Portuguese breed)
Bísaro Pig
Sus domesticus (raça Bísara) · Suidae
It is a native pig breed from the north, tall, with a long snout and large, drooping ears. It resembles a wild boar more than factory-farmed pigs, and grows slowly, outdoors.
Raised in the wild and fed on local produce, it is the source of traditional cured meats — ham, alheira and salpicão — at the heart of Trás-os-Montes cuisine. The cured meat fairs celebrate this product every winter.
Habitat
Woodlands and chestnut groves in the villages of the northern interior.
